   Ginger Cookies

Ingredients:

- 3 cups all-purpose flour

- 1 teaspoon baking soda

- 1/4 teaspoon salt

- 1 tablespoon ground ginger

- 1 tablespoon ground cinnamon

- 1/2 teaspoon ground cloves

- 1/2 teaspoon ground nutmeg

- 3/4 cup unsalted butter, softened

- 1/2 cup granulated sugar

- 1/2 cup brown sugar, packed

- 1 large egg

- 1/2 cup molasses

- 1 teaspoon vanilla extract

Instructions:

1. Prepare the Dough:

   - In a bowl, sift together the flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg. Set aside.

   - Using a mixer, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.

   - Beat in the egg, molasses, and vanilla extract until well combined.

   - Gradually add the dry ingredients to the wet ingredients, mixing until a smooth dough forms. If the dough is too sticky, add a little more flour.

2. Chill the Dough:

   - Divide the dough in half, form each half into a disk, and wrap them in plastic wrap.

   - Refrigerate the dough for at least 2 hours or overnight. Chilling helps the flavors develop and makes the dough easier to handle.

3. Preheat Oven and Prepare Baking Sheets:

   - Preheat your oven to 350°F (175°C).

   - Line baking sheets with parchment paper.

4. Roll and Cut the Cookies:

   - On a lightly floured surface, roll out one disk of dough to about 1/4 inch thickness.

   - Use cookie cutters to cut out shapes, placing them onto the prepared baking sheets.

   - Gather and re-roll any scraps to cut more cookies.

5. Bake the Cookies:

   - Bake the cookies in the preheated oven for 8-10 minutes, or until the edges are firm.

   - Let the cookies cool on the baking sheets for a few minutes, then transfer them to wire racks to cool completely.

6. Decorate (Optional):

   - Once cooled, you can decorate the gingerbread cookies with icing, sprinkles, or frosting as desired.

These gingerbread cookies are perfect for decorating and enjoying during the Christmas season!
